The original recipe for Pastel
– 300 grams of paste made from pure ground sesame
– 300 grams of natural honey
For good homemade paste of ground sesame you need raw hulled sesame seeds and oil of your choice (usually 2 teaspoons oil are used for one or a half cup of seeds, depending on how thick you want the mixture – mostly used sesame, olive or sunflower). Lightly fry the seeds in a pan without adding fat until golden (5-10 minutes, stirring constantly). Be careful that you do not burn as sesame seeds will become bitter tasting. After that put them into a blender with the olive oil and mix until you have a paste the desired consistency (you can add more olive oil if desired).
Mix these two ingredients in a bowl. Both ingredients are liquid, but what is very interesting, when you mix them well, they will be solidified in mass which can be shaped like dough.
During mixing, you can add to the weight and a handful of crushed pieces of walnuts, almonds, pistachios or hazelnuts if you want. Do not bake the mixture because it may lose many useful components and the fine taste, too.
Make some balls or some other form. Roll the balls in whole sesame seeds.
Put the Pastel balls on a platter and keep them in the refrigerator.
You may take 2-3 Pastel balls a day.
However, it will be very difficult as you try this delicious sweet.
